Instructions:
1. Prepare the Pakoras:
- In a mixing bowl, combine gram flour, chopped onion, green chili, cumin seeds, red chili powder, baking soda, and salt.
- Gradually add water to form a thick, smooth batter. Make sure the batter is not too runny.
- Heat cooking oil in a deep pan over medium heat.
- Drop spoonfuls of the batter into the hot oil and fry until golden brown and crispy. Remove the pakoras and drain excess oil on a paper towel. Set aside.
2. Prepare the Kadhi:
- In a large bowl, whisk the yogurt and gram flour together until smooth, ensuring no lumps remain.
- Heat oil in a deep saucepan over medium heat.
- Add cumin seeds, mustard seeds, asafoetida, curry leaves, and green chilies. Sauté for a minute until the spices release their aroma.
- Lower the heat and add ginger-garlic paste, turmeric powder, red chili powder, and salt. Cook for another minute.
- Pour the yogurt-gram flour mixture into the saucepan, stirring continuously to avoid lumps. Add water to adjust the consistency, and bring it to a gentle simmer.
- Add the chopped mixed vegetables and cook until they become tender and the kadhi thickens.
3. Combine Kadhi and Pakoras:
- Gently drop the prepared pakoras into the simmering kadhi. Let them soak in the flavors for a few minutes.
4. Serve:
- Garnish with fresh cilantro leaves and serve the delectable Kadhi Pakora with steamed rice or hot chapatis.
