Prawn Biryani: A Flavorful Delight from the Indian Kitchen

Ingredients:

  • 500g prawns, peeled and deveined
  • 2 cups basmati rice
  • 2 onions, finely chopped
  • 2 tomatoes, diced
  • 4 green chilies, finely chopped
  • 4 garlic cloves, finely chopped
  • 2 cm ginger, finely chopped
  • 1/2 cup yogurt
  • 1/2 cup fresh coriander, chopped
  • 1/2 cup mint leaves, chopped
  • 1 teaspoon turmeric powder
  • 1 teaspoon red chili powder
  • 1 teaspoon cumin powder
  • 1 teaspoon garam masala
  • 4 tablespoons ghee (clarified butter)
  • Salt to taste
  • Water for cooking

Instructions:

  • Wash the rice in cold water and soak it for 30 minutes. Then drain and set aside.
  • In a large pot, bring water to a boil and add the rice. Cook until the rice is 70% done. Drain and set aside.
  • In a pan, heat the ghee and sauté the chopped onions until golden brown.
  • Add garlic, ginger, and green chilies. Continue to sauté until the raw smell disappears.
  • Add the diced tomatoes and cook until they become soft.
  • Add turmeric powder, red chili powder, cumin powder, and garam masala. Stir well.
  • Add the peeled prawns and cook for 2-3 minutes until they turn pink and are cooked through.
  • Add yogurt, fresh coriander, and mint leaves. Mix well and simmer for another 2 minutes.
  • In a large pot, layer the cooked rice and prawn mixture alternately, finishing with a layer of rice on top.
  • Cover the pot with a lid and cook on low heat for 20-25 minutes until the rice is fully cooked.
  • Gently fluff the Prawn Biryani with a fork and serve.
